I feel a challenge there.
Okay, here goes.
the latest versions of the Viper Marine speed controls have no capability for reprogramming their various bits and pieces beyond forward and reverse. However the last version had all the bells and whistles of the car versions available at the touch of a button. I have found one in a boat and spent twenty minutes playing about with the settings and compiled the following;
Plug the boats battery in.
Turn on the Transmitter.
Hold down the Set Button on the speed control.
Now turn on the model via whichever switch powers up the speed control.
Now release the button.
This accesses the various settings available and you should now have a FLASHING GREEN light. This flashes for about 5 seconds, during which you can access the forward/reverse settings. If you dont press the button again in this 5 second window the speed control moves on to the next part of the programming. My advice, turn it all off and start again from the top.
While the light is FLASHING GREEN, push the button and release it. you should now have a SOLID RED light displaying. This first push disables the reverse and I think this is where most people accidentally disable their reverse function.
Rapidly press the button again.
You should be met with TWO FLASHES RED. This engages a delay on your reverse coming on.
Rapidly press the button again.
You should be met with THREE FLASHES RED. This engages a different delay on your reverse, can't remember what the difference is and quite frankly it doesnt matter on a boat anyway.
Rapidly press the button again.
You should be met by FOUR FLASHES RED. This engages normal reverse function ( and should really have been the programmed as the first button push, but hey, what do I know

)
You should now be met by a SOLID GREEN light, followed by a RED FLASHING light...touch nothing, leave it alone, this part of the programming accesses Braking Function, car stuff for car boys, not for us...
A SOLID GREEN/RED follows this.
Then ALTERNATE FLASHING GREEN/RED. This is the normal Forward/Reverse Setting part of the programme. Quickly press the Button.
A SOLID GREEN light follows, push the Transmitter stick forwards to set top speed forward.
A SOLID RED light follows, push the Transmitter stick backwards to set full speed astern.
That should be it. if it is still not working, try the above a couple more times. You should be pressing the button a total of five times to restore Reverse, once to access the settings and four times in quick succession to get the FOUR FLASHING RED lights. Or pressing the button a total of six times if you reset the final Forward/Reverse settings as well.
Older Mtroniks speed controls have a slightly different set up procedure, but the above should deal with controllers made in the last three or so years, however if your speed controller only goes backwards, red light on, its knackered
