Water resistant wheel bearing grease [as used in boat trailer wheel bearing hubs] is a synthetic rubber grease and will cope with the heat generated in a model vessel stern shaft stuffing box
Conventional petrochemical greases or even Vaseline will breakdown & are they also tend to be allow and entrain microscopic droplets of water in suspension.....and yes to defy science...the water migrates uphill or over the grease level O0......
Dow Corning manufacture a Rubber Grease for industrial applications
