What size in mm do people think that white ensigns would be in 1/72  One at stern and one on main mast

All depends on the size of the ship, where the Ensign is being flown from, and the day of the week (so one post describes)

I get my flags from Scale Flags and Ensigns.  Mike Allsop is very knowledgable.
