Having had yet another look at the OP and the size and space available, a pair of 545s driving 35-40mm props via direct drive should shift it nicely, while leaving the chance of building it light enough to have enough freeboard to keep it visible.

the large diameter motors and low kv will provide a lot of torque and keep the amps down

esc's you need 2 esc's one for each motor and i think these will do it and they have reverse. BUT im not sure. Im guessing that the amp draw will be low enough for the 35's to be sufficent, but you will need to place a 30amp fuse in the main power leads going in to the esc's. If you can spare the cash play it safe and get the larger 60 amp ones.

you need 2 run both motors of 8.4v. Now im a bit stuck here of what type of batteries to pick

if you use the 35 amp esc'a the total comes to around 132 quid which gives you about 48 quid to buy a battery and the charger to charge it.
