If I were to use cells like these: http://www.component-shop.co.uk/html/single_cells.html is it a case of simply solder wire from 1 cell to the next, and the put a tamiya plug on it? And would i just use the same charger as i use for my nimh stick packs?

YES

As long as the charger volts out is slightly higher than the combined cell voltage
Component Shop will make you up any combination -a lot less hassle

use my charger for 7.2V and it's another 7.2V pack that I want. How do you find out about them making up any pack you want? i can't see anything about it on their site, and the pack would need to be a certain shape split cell pack.
