Could you please tell me if running a 7.2v motor on 8.4v batteries will cause damage to the motor
I have had my boat out once under these conditions and it got quite hot

It will almost certainly shorten its life, but is unlikely to cause it to expire suddenly.

Just keep an eye (finger) on the how hot the motor gets.
As a rule, it's too hot if wet finger sizzles on it!

In the good old days I ran a Graupner 8.4v BB Turbo motor on 14.4v (2 x 7.2v Ni-Cads <remember those> in series) with a water cooling coil wrapped around the can, prop was an Octura around 45mm diameter, can't remember if it was a 4 or 6 series prop though.
It (the motor) never did get hot, mind you the batteries came in useful as hand warmers in brass monkey weather :}
Your problem may be the loading on the motor, try a smaller diameter prop O0
