Having just restored my childhood Milbro Ailsa yacht, 60 years old, I'm fired up and keen to try something more challenging. I am thinking of getting an Orion Mouldings hull, decking and rigging that. Two questions: can anyone suggest a good book to show me how to rig a gaff mainsail with topsail and how to I gauge how much ballast to put into the moulding to achieve the necessary stability demanded by how much sail I put on the hull?

The best all round book is
An Introduction to Radio Controlled Scale Sailing Models
By Phillip Vaughan Williams.
This should cover 99% of basic questions on basic design, setup, and sailing.
Available from Traplet for under a tenner http://www.trapletshop.com/gb/p/11346/an-introduction-to-radio-controlled-scale-sailing-models-by-phillip-vaughan-williams (http://www.trapletshop.com/gb/p/11346/an-introduction-to-radio-controlled-scale-sailing-models-by-phillip-vaughan-williams)
May be a few second hand on Amazon.

Good for you! All proper modellers like a gaff rig :-))
Here's a book I found useful. not a modelling book but it explains all about traditional boats and how they go together.
