Title: Speed fan for smoker

Can anyone tell me if it's possible to control a fan speed used on a smoke generator to show more smoke as you increase speed?

Is it a separate fan? If it's the same voltage as the motor, it should be possible to connect it to the ESC in parallel with the motor. Give it a try - even if it doesn't work it's unlikely to do any damage.

If the fan and heater/fogger run from the same supply this probably won't work and you are looking at a rewiring job to supply the fan from the ESC.
