I use a mixture of 1.0, 1,5, 2.0 and 3.0mm thicknesses, using plasticweld in small brown bottles to stick it with, but thickness alwaus depends on what I am doing.
I also have a stock of the treally thin stuff..thickness of paper and 80 gram card for detailing stuff such as hinges.......it's basically trial and eror to use what you feel is scale thickness.

My rule of thumb is start with A heavy thickness for the framework and get lighter is you get higher.
