I normally use 2mm marine ply, give it a coat with sanding sealer, paint and then sometimes a coat of varnish.

Are you going to lift the whole deck off in one piece?
If so it is likely that your guardrails will stretch and any water on the deck will run inside the hull.
The superstructure is placed on coambings, raised bulkheads which should keep water out of the hull.

Almost anything can work as long as you are extremely careful when removing.
One way is to have the removable deck cut just inboard of the railings.

It will be interesting to see a full removable deck, as I have only done access hatches under the structure or if I need more room removable sections of deck.
