Does anybody know of a suitable switch for a futaba transmitter.

Those that have been quoted are not momentary ie spring return to center off.

There might be a switch of that size that has spring return, out there, but I doubt it. The types pointed to latch in three positions, but have the option that having been switched to one side or the other, can be manually reset to center.
If the circuit that it is to be used in is known, it is often possible to convert a steady state step change of state into a pulse by involving a capacitor. But you really need to know the exact details of the circuit to get it to work. Usually, the switch just selects between the three states to give the right signal pulse length which results in, say, a servo, plugged into that channel at the receiver end will take up whatever that position corresponds to. If its a switcher plugged in, the switcher would be the item that selects between momentary and latching.

Might be the one, but scrolling down the page you get an options list that lets the site search for near matches. Quite a few.
Looking on Farnell's site in the switch section and applying their search options gives a few candidates as well.

Appear to be identical except for the style of the toggle itself.

Nearly - solenoids used "passing contact". As the switch lever was operated, it would complete the circuit during its passage to the new position, hopefully operating the point. To avoid cooking the motor, the circuit was broken before the lever got latched in its new position, where it indicated the point setting. That was true for the Old Hornby switches, and is for the Kato switches that I just looked at.
A non-latching three position switch that spring returns to center could be used if it could repeatedly carry the current, but the operator would need a good memory.
Looking at the links, any switch shown with the lever off to one side won't be momentary, the ones shown with the lever centered might be. Careful reading of the spec. needed.
