Mine is compound mitre cuts - I hate them with a vengeance!
It seems every joint on my current superstructure build is a compound mitre or worse, a double compound mitre - one mitre running into a second. I have given up on the plans and resorted to cutting card to shape and then fitting and re-cutting until I get somewhere close, before transferring measurements to Coreldraw.
So 'fess up, what are your nightmares?

mitred cuts around a curve - eg where the windscreen meets the curved roof, and the screen is angled back away from the roof, both vertically and horizontally - eg this cabin front on a curved deck

I detest soldering. Which doesn't help when you are building a Severn lifeboat.

Right now, my nemeses is spray painting. I don't mind small bits I can mount on a card, or even reasonable sized hulls and superstructure. but right now my 7 ft battleship is consuming a seemingly endless supply of Halfords grey & red primer rattle cans. There just seems no end to it {:-{
I am having to use my Workmate in the garden. My spray booth is no good.
Maneuvering the giant lumps through the house is awkward, and I don't even have the batteries in yet.
However, look on the bright side . . . Just think of a couple of square metres of deck planking, to say nothing of endless lines of stanchions - all to look forward to.

Being overly fussy about getting it spot on. I will worry and redo something 10 times to get it 'spot on' rather than let it go at 'close' or 'near enough'. And I can't move on until it has been finished........!!!!!!!
I have re done my front mast several times to get it right and have just noticed one of the lamps only works when the wires are wiggled.........AAAAARRRRRGGGGGHHHHH

Planning. I either forget what works better before doing something else, or I get inpatient and want to make something NOW!
I reckon I'm a jack of all trades with the hope of improving for future projects.
