12 volt gives it wgat I would call  a nice speed (remember as straight runners no speed controller--all or nothing) about brisk walikng pace. It all depends on the size of prop you will use, and this applies to all boats (model or otherwise) its all a matter  of trail and error, wwhat prop works for on may not work for another even though the set up is the same. This also will have an effect on current draw, ie 60mm prop with large pitch will drain the battery faster than say a 35 mm X type.
The motors will run quiet, depends on the mounting, coupling and even free air space in the hull (large space= sound box) so this should be considered.
True silence will be very hard to achieve, and if this is what you are aiming for, start the whole design with the motor and running gear and work from there.

Here we have another straight runner (4 ft long ) fitted with a MMB 900 motor, running on 18 volts
