What size motor can it handle?

Well I've decided to purchase one of Dave's P94 Mixers for my bait boat.  I believe the built-in esc's are rated at 20 amps.  Can someone tell me what size motors this module will be able to handle?  I know absolutely nothing about boats, apart from the fact that prop size and design plays a big part in the current draw on the motors.

With that in mind, would someone also be able to recommend me some props to use for my boat.  Dave suggested that I shouldn't use plastic.  Why is this?  As all shop bought boats out there come with plastic props.

Plastic props are CHEAP, they allow lower current draw as most are small pitch.
Motors like 545 or even genuine 550's would be fine on this model.
I would prefer direct drive as it is much quieter that a gearbox.
20 amps will cover most motors except hot race motors.
