Servos for Marblehead

I have a "vintage" marblehead, built about 1956 to Tucker's Windsong design. It hasn't sailed for years but seems a reasonable project to convert to R/C, but without compromising the original appearance if possible.  I'm not looking to race her as she would be outclassed by modern designs.
This will be my first excursion into the world of R/C yachts. I am at the stage of buying servos but can't find much to guide me on the web (except for IOMs, but they have a smaller sail area so I am guessing I need something with a bit more torque that they use.)
I am looking to use an arm servo for sail control rather than a drum winch as I am nervous about sheets coming off the winch drum due to the rather sharp angles to run the sheeting line through a very limited hatch space (4.5 x 2.5 inches) and the need to be able to get my hand inside the hull.
I think I need to choose either a Hitech 765, 815 or a Futaba 3306. Any advice would be welcomed.

The IOM sail area is so close (and, if memory serves right, actually bigger, M at 800sqin, IOM at 820), that the information should transfer directly.  A competing IOM probably generates more force for the winch to deal with than a "cruising" M.

Thanks, I had got the impression that Marblehead would require stronger servo than than an IOM. That is helpful.
