If going for an AM or FM outfit, 2 channels is the cheapest option, but if going for a 2.4GHz 4 or 5 channel set, there is almost no price difference.  Just use the channels you want.  You might think of a use for the others later.
There is the advantage of not having to bother about having crystals that don't clash with anybody else.  The downside is that there isn't much compatibility between makes, so any future receivers would have to be the same make and possibly model to bind with the transmitter.
Good makes?  At the basic level, anything listed by the major UK hobby shops will be OK.

i personally wouldnt buy anything in the am/ fm range unless you plan to have a submarine , for the current price difference between the am/fm 2 chanel sets and the 2.4ghz multi chanel radios  id buy a 2.4ghz set up ,  no interference to worry about .

 I agree Jon
If you are not running Submarines there is no reason to buy anything than 2.4Ghz
gear when starting out in the hobby.
No frequency clashes and no antisocial aerials waving around at the lakeside.

Radiolink gear : cheap and cheerful, I have two transmitters and six or seven receivers and they
seem reliable enough.

transmitter and receiver : £27.18
http://www.giantshark.co.uk/giantcod-24ghz-4channel-mode2-transmitter-p-403779.html

receivers : £10.24
http://www.giantshark.co.uk/radiolink-receiver-r7eh-p-405468.html

you can bind several receivers to one transmitter - this allows you to use one transmitter with several boats

I shall leave it to others to recommend other (more expensive) radio sets, Planet T5, Hitec, Futaba etc.

Richard

I notice you are Sheffield based - where do you sail ? - I used Millhouses Pond when I lived in
Sheffield - nice pond, easy parking and great cafe

It all depends on the depth of your pockets.... The flysky systems have a very good reputation and can be had for about 40 pounds including the receiver.
http://www.giantshark.co.uk/flysky-6channel-transmitterreceiver-p-406150.html

or there is the Plant system
http://shop.huntersystems.co.uk/planet-t5---24ghz-digital-remote-control-system-1473-p.asp

both are good budget systems

When you consider a 2Ch 27 or 40Mhz system will cost you about the same, like others have said it seems pointless

Another good system is the Spektrum DX6i and DSM system but this is almost double the price, but then there is the Orange range of receivers that can be picked up for about a fiver each which makes this a contender.
Also Orange now do there own TX which is getting good reveiws.  A good TX if you can get over the styling as its not to everyones taste

The there are the more expensive brands like Futaba and JR
