is it possible to extend the wires between the motor and speed controller?  I know its possible, but is there any problems that I should be aware of???

it should be no problem as such.  Be aware of it's position in relation to the other circuitry.  A ferrite ring around it might be advised.

ESC to controller not a big problem, use the same or larger wire, ESC to battery is a problem in high current applications, the FE guys put in extra capacitors to counteract the caused problem.

Hullo Nick.....I see Pete C's words "to extend the wires"......like an extension lead? :o

Would it be better to remove/terminate the wiring at each end & start again with the appropriate sized longer conductor wiring and add new high amp capacity carrying bullet connectors?

Best option is to keep all leads as short as possible and it would depend on how good your soldering skills are, the motors sometimes just have the winding wires as the fly leads from the motor ( they have 4 or more strands in each winding per phase) To access the pads in the ESC would mean cutting away the wrap.
