The 3639-1100kv  motors require 2S to 3S Lipo batteries about 5800mah.
2S =8140rpm.
3S =12210rpm.
We have one motor in a Spearfish deep vee and it's very quick(about 35mph), so, two in a sleek hull 25-28 knots will be one probable.
It looks like you are using Hobbyking car ESC's(60 amps ones work very well).
You require a program card to set them up, but, they are very easy.
Only 25% in reverse!!!

Ref Crows Rest. When you look at it its not much of a stretch from the bridge coming. I wouldn't be surprised if they just scrambled up, note health & safety in those days

Hi some work on rafts.

Made from balsa wood I then dope on some aeroplane tissue to give some texture to surface.
