Ok quick question.
If a servo is left off center for a period of time. .....about 7 years, would there be any damage to the electrics ie centering pot etc?

Not due to leaving it off center, it doesn´t matter in which position.

Anything else I can answer after looking into my crystal sphere  {-)

A lot of servos havnt actually got a true centre to them,The arms that go to the servo are splined so they can actually be a couple of degrees off centre.....the way to get them true centred is off your Radio set by setting your end point or trim

If it gets left for 7 years, it might start suffering from old age.  Things like the wiper in the pot might well grow a layer of oxidation that might interfere with its working at the point of contact with the carbon track.  Similar with the motor brushes and com.  Grease in the gearbox might have dried and set.  A lot depends on what its state was 7 years ago.  A lot of "mights" because its guesswork.
