Realize this is a very old topic but was watching another fascinating video from Dave  Engels Coach Shop,
he uses a technique I've not seen before, using vinegar to instantly age wood... anyone tried it?

I think he mentioned a couple of episodes back it was vinegar with iron filings added.

Do you need to neutralize the acid before applying any finish or will washing it be sufficient?

The steel wool should neutralise at least most of the acidity.
