I think an Irvine .61 would be too much for a 32" x 8" hull. It may be better to stick with the smaller engine.

It should be liveley enough with the .61 in it. I've run a 24" hull with a .61 before now. It was almost uncontrollable at high speed. But once I put a smaller prop on it was fine, used to over rev lots if allowed to but it was OK.
