Assuming the motors are brushless, you will need an esc for each.

Those are brushless motors. You will need 2 esc's. Period.  On brushed motors you can put 2 motors onto one esc. But on brushless it's a no no. One motor will not work.
Also as you will have 2 esc's it would be worth getting 2 batteries instead of running off one

I have used those motors in aircraft. They have a nice voltage range, to get the perkassa running fast, max the voltage, There are a number of combinations, but one 4 cell lipo per motor/esc would be good, similar to what I did with my PCF Boat.
higher mah means more run time, I would suggest 3000mah upwards to get a runtime of up to 25 mins approx,  (not all flat out though!)depending on budget available. If you use a gell cell, its a bit like having a V8 engine in your car, and running it on chip fat oil!, and nihms wont deliver the power of a lipo. But, you do need a specific charger, and compatible connectors, so some soldering might be required

This might help, these are quite good

and my pcf build might help

Not strictly true Klunk. The perceived wisdom of the internet forums is that if the motors are a matched pair they can run from one esc, there are even youtube videos demontrating this very thing.

My Hooben is running on 2 of those motors ( 2 Esc ) with 35mm plastic props and S3 LiPos give over scale speed. I usually run with a pair of 4000 2S.

DO NOT rely on this working! some may have GOT AWAY with it, but for reliability, and less chance of "magic" smoke, one ESC each motor.
