Would any have or is able to direct me, a build guide/manual for an Aquataur A600 Sailboat.

It seems to show that the drum winch shown in the cockpit, that is almost in the vertical plane, is to control the crewman only; and does not appear to be a sail winch. As it is not hauling in the sheet/rope. Unless the sail sheet is disconnected in the video.

This suggests that either
A - there would be a second sail servo (arm or drum) below the deck, with the sail sheet/rope passing through the fairlead at the sailors feet.

Or
B - The sail sheet connects to the loop of line that controls the crewman. That would be connected at the centre line of the loop (possibly below the sailor's feet) when the crewman is seated on the centre line.

Without knowing the boat or seeing the innards, or having the model in front of me, that would be my guess.

Hi Tiger,
That's better as I can see the run of the cord.
In the close up behind the pulley is a lever and this is the sail control/winch.
