The grey bits are part of the gantry cranes. They open out.

They are 'self loading' container and cargo handling gantries, they can handle general cargo, but more specifically containers on and off the ship so there is no need for a dedicated terminal.
They also have a 'roof' over to keep out rain when the hatches are open. Not always needed but some loose cargo can be damaged by rain.
