The 3 way switch (Ch5) on this Tx. Shows zero output in mid position full plus or full minus when switched either up or down. I guess that is useful for 'flyboys' but what use can it be put to on boats? I would like to do a change over of mast light circuits any thoughts?

Try this unit for size. Will work fine with a three position switch.

I've used that switch to control an Mtronics Small Diesel Tug sound unit in a Clyde Puffer I'm building.   The upper switch position uses the latched channel on an MTronics microswitcher to turn the diesel motor sound on and off.  The lower switch position uses the microswitcher momentary channel to sounds the horn.  It was comparatively easy to set up and works very well indeed.
