Graupner Speed 700BB Turbo 12V motors are normally used in faster boats but the 12v ones are quite mild sail it see how it goes ,check to see how hot they get after a few min and see how long they run with the batteries you have, it should be powerfull plus they are internally fan cooled

What voltage are you running them on? On 6 volts they will be quite good with around 40 mm props as they will have a no load speed of about 5500 RPM

Just my look on things here ribble fox.
If you take out the motors fitted and then fit larger motors you will also need to alter the mount and alignment and possibly the couplings for those motors (probably) this is a lot of work on a vessel which is in my opinion ready to work and with the motors fitted you should find it will tow very well and to scale as much as the models can be.

As I said just my look on things but it is your model and your decision

Have you tried this boat on the water yet?

It would be a good idea before you start changing things, it might run very well.

I seem to read that your a little worried over the battery drain, I would see the remedy for this with the purchase of a set of spare LSA batteries and have them charged before you go to the lake.
I have sailed a tug with the same motors for around 5 hours then changed to the second set of batteries and continued
I still take fully charged spare batteries when I sail my other tugs Tito Neri has two 12v SLA and one 6v SLA, the springer has a 6v SLA and the jet sky has a lipo (I can recharge the lipo by using a charger from one of the 12v SLA and also help out with others at the lake if they need a quick boost for their lipo's
Go to the lake and drive your tug hard then see how long your sail times are that way you will see if you have any need to change motors or find a way to increase sail times.
driving hard will give you the shortest run time from your batteries therefore it will be the best footprint to work from.
