For a definitive answer, the instructions are usually a good start, if none came with it, http://www.dumasproducts.com/product_info.php?products_id=722  assuming its the Dumas kit.
For a boat that size, shape and performance, I would think a 3 or 4 blade prop about 35mm.
Prop shaft tube? Measure to where the motor is going, allow room for the coupling, that's how long.
Motor?  5 pole 385 or a 545 for a bit more go.  Battery?  No higher voltage that the motor rating.
Any marine 15A ESC, preferably not sourced from the orient via ebay.  Marine because they usually reverse and dont do braking.
Radio?  Nowadays, a simple 2.4GHz set would be the choice.  No channel/crystal worries, receiver is easy to hide, no big long antenna on the TX.
Whether any of that lot is usable on another boat depends the next boat.

Much like John says, but - brushed electric motors direction of rotation is decided by the direction of the current going through them so either hand of prop is satisfied.  Most of the world regards the hand of the prop to be the direction of rotation as viewed looking forward, continental Europe regards it as looking back down the shaft, point to bear in mind when buying your prop.  The current direction is sorted out by the ESC, or Electronic Speed Control.  Futaba is a good brand, but for a model of this type (i.e. any boat) the extra cost of a digital servo is a waste of money, traditional, normal ones perform perfectly adequately.
A rule of thumb is that the prop diameter should not exceed the motor diameter, gearing to compensate for a larger prop should go by the ratio of the swept area - double the prop size, gear down 4:1.  A large slow moving prop will move the same amount of water a a small fast moving one, it will just move it more slowly with the appropriate effect on boat speed.

A look at http://www.modelboatmayhem.co.uk/  "technical stuff" is highly recommended.
