What are the best  speed controllers  that work well with 12 volt water jet motors

Do you know the make / type of the motors or waterjets. Any numbers etc on them. If not post pictures of the motors.
Otherwise no answer is possible without guessing.

why use ESC, use relay or mosfet to switch on.

You can use any esc capable of handeling the current drawn by the motor,it is advisable to go for a higher current rated esc.
If you have brushless motors you will only need a forwards onlyesc,as the water jet has,or should have the reversing
function built in.Brushed motors could be used but must be set up to operate mainly in the forward direction only.
Water jets hav to be set up correctly, other wise they just circulate the water and very little motion of the model. :police:
